Phoenix Fire Spicy Noodles

Ingredients

  • 8 oz of rice noodles
  • A couple of tbsp of vegetable oil
  • 3 cloves of garlic, minced
  • A splash of soy sauce
  • 1 tbsp of chili paste
  • A handful of chopped green onions
  • 1 tsp of sugar
  • A pinch of salt
  • 1 cup of shredded chicken (optional for meat lovers)

Instructions

  1. Boil 4 cups of water in a pot and cook the rice noodles for 8 minutes until al dente. Drain and set aside.
  2. Heat 2 tbsp of vegetable oil in a pan over medium heat. Toss in the minced garlic and sauté for 30 seconds until golden.
  3. Add the chili paste, soy sauce, sugar, and a pinch of salt to the pan. Stir for 1 minute to blend the flavors.
  4. Throw in the cooked noodles and shredded chicken (if using). Toss everything together for 2 minutes until well coated.
  5. Garnish with chopped green onions and serve immediately.
