Ingredients
- 8 oz of rice noodles
- A couple of tbsp of vegetable oil
- 3 cloves of garlic, minced
- A splash of soy sauce
- 1 tbsp of chili paste
- A handful of chopped green onions
- 1 tsp of sugar
- A pinch of salt
- 1 cup of shredded chicken (optional for meat lovers)
Instructions
- Boil 4 cups of water in a pot and cook the rice noodles for 8 minutes until al dente. Drain and set aside.
- Heat 2 tbsp of vegetable oil in a pan over medium heat. Toss in the minced garlic and sauté for 30 seconds until golden.
- Add the chili paste, soy sauce, sugar, and a pinch of salt to the pan. Stir for 1 minute to blend the flavors.
- Throw in the cooked noodles and shredded chicken (if using). Toss everything together for 2 minutes until well coated.
- Garnish with chopped green onions and serve immediately.
