16- ounce jar of local honey

¼ cup fresh chopped herbs or 2 tablespoons dried herbs any variety
Instructions

Place an open jar of honey in a small saucepan filled with 1-2 inches of water. Heat the water until the honey is warm and runny, ensuring it does not boil.

Carefully remove the jar from the water bath and add your chosen herbs directly into the honey.

Seal the jar tightly and give it a good shake to mix everything together.

Place the jar in a sunny window and let it infuse for 1 to 5 days, depending on how strong you want the flavor.

After infusing, reheat the jar in the water bath until the honey is runny again. Set a fine mesh strainer over a clean bowl and pour the infused honey through it to remove the herbs.

Pour the strained honey back into its original jar or another clean container. Store in a cool, dark place for up to six months.
